Carrot, Apple and Courgette Muffins

We’ve been creating our own recipes at the moment and one that has gone down a treat has been our Carrot, Apple and Courgette Muffins. Our little Finlay has a cooking addiction. Not just in the watching ‘I Can Cook’ Cbeebies category of addiction but in the obsessive – asking – to – do – cooking -everyday -kind -of category. From the moment he wakes up until the moment he goes to sleep – it’s very unwise to ask him ‘what would you like to do?’ unless you are geared up for a flour covered kitchen.
Finlay believes most things should have flour, sugar, butter and eggs in because these are the best things to whisk, squish, crumble and taste! But he’s also up for helping me with dinner and even the washing up as it’s a lot of fun splashing about in the water. His favourite things to do at the moment are snipping the ends off green beans and chopping up mushrooms (even though he DOES NOT like to actually eat them!) But I thought he might like to try eating Carrot, Apple and Courgette Muffins.

But our latest cooking escapade was a cunningly devised little muffin that I hoped would get him to eat a few more veggies: ‘Carrot, Apple and Courgette muffins‘. Like most toddlers, he’s not that keen on any vegetables other than carrots and peas so I thought that trying to include vegetables in a cake with apples for sweetening would be a good idea! They were tasty before they went into the oven and didn’t last long after they came out!
And they were a big hit with the cooking obsessed boy – plenty of grating, squishing, stirring, whisking and tasting!

This makes about 12 Carrot, Apple and Courgette Muffins in mini loaves.
- 320g plain flour
- 3tsp baking powder
- 50g raisins
- 2tsp cinnamon
- 1tsp salt
- 150g light brown sugar
- 4 eggs
- 150ml sunflower oil
- 150g peeled, cored and grated apples
- 150g grated courgettes
- 150g grated carrot
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Sieve the flour and baking powder together then mix with the other dry ingredients, saving a little of the sugar to sprinkle on top of the muffins.
- Mix the eggs and oil together. Add the grated apples, carrots and courgettes.
- Mix the dry and wet ingredients together without overworking them. It doesn’t matter if there are lots of lumps.
- Divide the mixture between the muffin moulds. Decorate each with a pinch of sugar.
- Cook the muffins for 15-20 minutes until they are firm and golden. Check they are cooked through with a skewer; if it comes out clean, they are done. Happy Baking!
