Firework night totally crept up on me this year – I feel like it totally appeared out of the blue! And I felt the same about Halloween and dark nights and cold days I literally don’t know where the last few weeks have gone! That said, I’m totally ready for snuggly jumpers and crisp Autumn walks followed by hot chocolate and snuggles on the sofa! We’re looking forward to a cosy Autumn round here!
The weather here last week was ridiculously excellent. We never get autumns like this — crisp, cool, colorful, crunchy, perfect. We’ve been sincerely spoiled this year, and it’s really nice. We were able to get outside quite a bit over half term and it’s been wonderful. But firework night came along and it poured down! It was a really damp drizzly affair as we popped down to a local firework display. We visited the same display as last year which is a treat, perfect for little ones – not too many crowds, fireworks set to music (with some family favourites such as Frozen’s ‘let it go’ thrown in!) We took Orla for the first time this year and at aged three-soon-to-be-4, she loved it!
Inspired by the Bake-Off we got a little crazy into our baking around here last weekend and created ‘Toffee Apple Firework Muffins’ to celebrate Firework night! You know when something seems a really good idea in your head? Well, that’s totally what we thought when we devised these crazy sticky toffee apple muffins complete with chocolate or sweetie fireworks! These are the worst of cakes for the waistline and the teeth but are oh so much fun to make!
The sweetie fireworks did not turn out how we imagined! We were hoping for some spectacular sugar-work as seen on the ‘Bake Off’ but ours ended up getting all stuck together! They won’t win any beauty prizes – that’s for sure but hey ho – they did taste good!
If you’d like to try this sweet treat, here is the recipe!
