We’re in love with everything cinnamon at the moment! It’s a perfect wintery flavour isn’t it? It’s a shame that our apple tree doesn’t produce apples in the winter because I can always think of more things to make with them in the colder months. I am building up to making cinnamon rolls which are my favourite of cinnamon sweet things but I’m not sure my limited culinary skills can live up to this. If anyone has a fool proof cinnamon bun recipe- let me know! Our children love to bake and in honour of a lovely new gift that we received from Arty Apple, we decided to make Cinnamon and Apple cake this weekend.

Both my 8 year old and 3 year old girls loved the aprons, they have cute designs without being too childish so they suit children of all ages. Those who have more than one child will appreciate that the aprons are the same aprons but personalised so you can decipher whose is whose! I was pretty impressed with our Apple and Cinnamon cake, it was moist, a bit crumbly but Orla’s slip of the hand with the cinnamon actually made it taste all the more delicious and the balance of the sweet with the chunks of apples was perfect! We will definitely be making it again! The smell of warm cinnamon has to be one of the best smells in the world!
If you’d like to try making our Apple and Cinnamon Cake, you will need…..
- 175g unsalted butter, softened
- 175g golden caster sugar
- 225g self-raising flour, sifted
- 1tsp baking powder
- 2 eggs, beaten
- 1tsp vanilla extract
- 1tsp ground cinnamon
- 50ml Greek yogurt
- 2 eating apples, cored and roughly chopped, with some grated
- 1 tbsp icing sugar, for dusting
- 1. Pre-heat the oven to 180° C.
2. Grease and line a 7 inch tin with nonstick baking paper.
3. In a large mixing bowl, cream together the butter, sugar and vanilla extract until light and fluffy. Beat in the eggs, one at a time, mixing well between additions. Fold in the flour, baking powder, cinnamon and yogurt until incorporated, then add the chunks and grated apple, mixing well.
Spoon into the prepared loaf tin and bake for 70-80 minutes; it is ready when a skewer comes out clean from the centre of the cake. Remove and allow to cool in the tin for 10 minutes before turning out.
Transfer to a wire rack to cool completely and finally dust with the icing sugar once cool.
